Crock Pot Black Eyed Peas Recipe
Ingredients
- 1 pound dried black eyed peas
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 4 cups vegetable broth or chicken broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon smoked paprika
- 1 bay leaf
- Optional: 1 cup diced ham or smoked sausage
Instructions
- Rinse the black eyed peas under cold water and remove any debris.
- In the crock pot, combine the black eyed peas, onion, garlic, bell pepper, and broth.
- Add salt, black pepper, smoked paprika, and bay leaf. Stir to combine.
- If using, add diced ham or smoked sausage.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until peas are tender.
- Remove bay leaf before serving. Adjust seasoning as needed.
