Crock Pot Black Eyed Peas Recipe

Ingredients

  • 1 pound dried black eyed peas
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 4 cups vegetable broth or chicken broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1 bay leaf
  • Optional: 1 cup diced ham or smoked sausage

Instructions

  1. Rinse the black eyed peas under cold water and remove any debris.
  2. In the crock pot, combine the black eyed peas, onion, garlic, bell pepper, and broth.
  3. Add salt, black pepper, smoked paprika, and bay leaf. Stir to combine.
  4. If using, add diced ham or smoked sausage.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until peas are tender.
  6. Remove bay leaf before serving. Adjust seasoning as needed.
